Our evening at Sushi | Bar Miami Beach marked the unveiling of Rienne’s residency: a vision brought together through an extraordinary partnership with Sam Attia and Shawn Abreu—two leading voices behind one of the most sought-after omakase institutions in the country.


Sushi | Bar has become a known force in modern Japanese dining precisely because it understands balance. It preserves tradition with reverence, while allowing contemporary perspective to sharpen and evolve it. Nothing is discarded. Nothing is frozen in time. The result is a style of hospitality and cuisine that feels grounded, confident, and current.


This philosophy is exactly where Rienne and Sushi | Bar align.


From the earliest moments of preparation, the room reflected this shared sensibility. Napkins set at precise distances. Stations aligned. Movements deliberate. The team knew who was arriving, how the progression would unfold, and what the experience required before the first guest took their seat. There was no sense of performance—only readiness.


The night itself was led with clarity and fluency by Shawn Abreu. Present throughout, he introduced each liquid expression with the precision of a sommelier and the execution of an expert operator. Every course, every pairing, every pause was explained with intention, allowing guests to engage deeply without ever feeling instructed. This was not theatrical storytelling. It was mastery through understanding.


At the counter, Chef Arrel and his team delivered a modern omakase progression that honored Japanese tradition while pushing gently at its edges. The menu felt alive—confident enough to innovate, disciplined enough to remain centered.


One dish in particular stayed with us: Sawara, finished with ginger powder, kizami wasabi, blueberry, and pear wood smoke. Unexpected, yet restrained. The blueberry never sweetened beyond its role; the smoke never dominated. The dish resolved through balance, demonstrating how modernity can exist in harmony with tradition.


The closing dessert, Kokonatsu, followed the same logic. Monaka kikua, coconut ice cream, ube mochi cake, and rice pudding foam came together in a composition that felt thoughtful rather than indulgent—precise, comforting, and quietly inventive.


It was within this context that Rienne’s pairing unfolded.


The purpose of the evening was simple: to invite discovery—naturally, without agenda. A curated selection of low-intervention wines, botanical spirits, and sparkling teas moved alongside the progression with ease. Nothing competed. Nothing overreached. Guests responded warmly to every pour, yet one moment brought the room to a shared pause.


At the close of the experience, a 2oz pour of ROI was served as a digestif.


Its origin, minerality, and purpose were clearly explained. And still, when the glass was lifted, the effect was immediate. The refined minerality—clean, grounding, quietly expansive—felt like a return to center. After an evening defined by nuance and intensity, the water did not add another layer. It resolved the experience.


Several guests later reflected that the evening didn’t feel like a compromise—but an upgrade.


We were accompanied by an extraordinary group of voices that evening: competitive athletes, international wellness speakers, and trailblazers shaping Miami’s cultural and social fabric. Their presence brought depth and perspective to the room, invigorating the experience through curiosity and conversation rather than spectacle.
