Provenance — origin, terroir, the lineage of place and hand. The wine world's word, always. The word that belongs here too. Every bottle on this wall is real wine: the grapes, the land, the vintage.

These are wines made by people who refused the usual compromise. The alcohol is drawn away under vacuum, nothing else touched — so structure, acidity, and finish stay exactly where the winemaker left them. Tasted blind, several have surprised people who pour wine for a living.

What follows is the selection. Every bottle chosen by the house, kept with intention.

The Pour

For the table, the toast. Bolle, complete — sparkling and still, white, rosé, and red, every bottle fermented twice. The Chardonnay Reserve is Mâcon, Burgundy. The Grand Reserve rests nine months on the lees. Woody's, farmed like wine in Mendocino — its Blanc de Blancs and Sparkling Rosé.
