Bolle Cabernet Sauvignon
The red — blackberry and cassis over soft tannin, twice-fermented, savory at the close.
Most houses take the alcohol out of wine and stop. Bolle starts there — a second fermentation, run this time not for bubbles but for the wine itself: aroma, mouthfeel, the full shape of a finished red. Nothing added — no sugar, no flavorings. That discipline is why they entered the house.
The Cabernet Sauvignon is drawn from 100% Cabernet grown in California. Deep ruby and clear — blackberry, black cherry, and cassis open over a whisper of vanilla oak. The palate is medium-bodied, the tannin soft and fully integrated, the acidity gentle; it closes savory, tinged with cedar.
The deepest voice in the Bolle range. We chose it for the tables the whites cannot reach — the char, the smoke, the long dinner.
