Bolle Duet — Blanc de Blancs & Sparkling Rosé
Two halves, one maker — the bright and the berried, side by side.
Most houses take the alcohol out of wine and stop. Bolle starts there — a second fermentation, so the bubbles are born in the bottle; then patient months on the lees. That patience is why they entered the house.
The Duet is both sides of the maker in half bottle: the Blanc de Blancs — lemon, grapefruit, and lime over lively bubbles, closing quietly toasty — and the Sparkling Rosé — white strawberry, blackcurrant, and violet over a fine bead, dry, with an earthy mineral depth. One reads citrus and toasted; the other, berried and mineral. Same hand, two voices.
We keep the half bottle for a reason. It is the honest pour for two — a glass and a little more each, opened without occasion, finished without ceremony. Pour them across one evening and the pair becomes a conversation: which side of Bolle is yours?

Serve — 45–50°F, well chilled. A half bottle chills fast — twenty minutes in ice and it is ready.
