Bolle Sparkling Blanc de Blancs

Most houses take the alcohol out of wine and stop. Bolle starts there — a second fermentation, so the bubbles are born in the bottle; then patient months on the lees. That patience is why they entered the house.
The Blanc de Blancs is Chardonnay joined by Silvaner — gold in the glass, clear and lit. Lemon, grapefruit, and lime open first, with mango and green apple behind them; the palate is crisp orchard fruit squeezed over citrus, broadening as it travels, gathering a mouthwatering zest. The finish turns quietly toasty — warm, subtle, longer than you expect.
The aperitif of the house. Where the Rosé is the long afternoon, this is the first glass of the evening — the one that wakes the table up.
