La Trappe Nillis (4 Pack)
Berkel-Enschot, inside the walls.
We chose Nillis because there is nothing else like it on earth: the first and only 0.0% Trappist beer in the world. Authentic Trappist beer is brewed within abbey walls, under the monks’ own hand, and the designation is held by only a handful of monasteries anywhere. De Koningshoeven has brewed at Berkel-Enschot since 1884. In 2021 they made this. A monastery has no trend to chase and nothing to prove — which makes their decision the most disinterested endorsement this category has ever been given.
An amber Trappist, and it looks the part: dark amber beneath an off-white head. Fruity and malty at the open, a pleasant bitterness through the middle, a caramel sweetness at the close. Water, barley malt, hops. Nothing else was asked of it.
A beer at peace.
We do not score. We read. The Reading is how the house locates this bottle — four axes, written on the four petals of the mark.

One to four petals, quiet to pronounced. A Reading is a location, not a grade.
Read in — The Savage Highball, decanted to the rim. A full, proper pour.
Serve — Cold. The bottle empties into the glass; the glass is the serve.
