Piozzo, gone botanical.

We chose Baladin because Italy's craft-beer pioneer did not treat the zero-proof shelf as a lesser one. From Piozzo — where Italian craft brewing began — comes a malt composed like an amaro: barley through the brewer's hand, then gentian's noble bitterness, coriander, passionflower and chamomile, every ingredient Italian. That seriousness is why it entered the house.

Herbs and roots over toasted grain — bitter-sweet, rounded, unhurried. Dried florals and a whisper of citrus peel at the open, the malt soft through the middle, and gentian carrying the close: a clean, grown-up bitterness that lingers like the end of a good conversation.
