Bolle Sauvignon Blanc
The lively one in white.
Most houses take the alcohol out of wine and stop. Bolle refuses the shortcut — real wine first, then a proprietary double fermentation that keeps the wine's aromatic integrity intact. No one else does this. That patience is why they entered the house.
The Sauvignon Blanc is the grape at its most awake — 100% Sauvignon Blanc, gold and clear in the glass. Crisp apple and ripe pear open first, fresh-cut grass just behind, and a trace of passion fruit running through like a rumor of the tropics. Lively acidity carries it across the palate — medium-dry, light on its feet — to a clean, bright, lingering close. Nothing added: no sugar, no glycerin, no flavors, no aromas. Everything in the glass was made by fermentation alone.
The white that wakes the table.
We do not score. We read. The Reading is how the house locates this bottle — four axes, written on the four petals of the mark.

One to four petals, quiet to pronounced. A Reading is a location, not a grade.
Read in — the Stem Zero Masterglass. The bowl gathers the aroma and lifts it to the nose before the first sip.
Serve — 46–50°F, well chilled. The aperitif hour, and the table that follows it.
