Description

California, in pale pink.

Most houses take the alcohol out of wine and stop. Bolle refuses the shortcut — real wine first, then a proprietary double fermentation that keeps the wine's aromatic integrity intact. That patience is why they entered the house, and why their rosé drinks like rosé rather than like an apology for one.

The Still Rosé is built on the classic Provence recipe — Grenache and Cinsault in nearly equal halves, Carignan and Mourvèdre threaded through — grown and made entirely in California. Pale, luminous, light pink and clear; fresh raspberry and cherry rise first, watermelon and pink grapefruit behind them. Bone-dry through the middle, mineral-driven, medium-light — and at the close, a touch of peppery spice that lingers well past the sip. Vegan, nothing added: no sugar, no flavors, no color. What sweetness remains is the grape's own.

Serve — 46–50°F, cold but not iced. The long lunch, the garden gathering, the warm afternoon that runs into evening.


The Reading, in Full

Nose — Raspberry. Fresh raspberry and cherry first, watermelon and pink grapefruit at the edges — a Provençal nose, entire.

Arc — Taut. Bone-dry from the first moment, medium acidity holding the line — it travels lean and never slackens.

Weight — Mineral. Medium-light and stone-driven; elegance carried on structure, not on softness.

Stay — Peppered, long. The mineral finish lingers, and then the surprise: a touch of peppery spice, the signature that stays after the fruit has gone.

The Table — Lobster poached in butter. Prosciutto with melon and figs. Hamachi with finger lime — and at the end, the apricot galette. The table that takes the whole afternoon.
