Copenhagen Sparkling Tea was born from the Nordic restaurant world — where the best chefs on earth needed something with the structure, tension, and acidity of wine, without the alcohol. Saicho was built by a tea expert and a sommelier who asked what would happen if single-origin leaves from China, India, and Japan were treated with the same precision as grand cru grapes. Both answers changed what we believed sparkling tea could be.
