We chose the owl because Japan's most exacting craft brewery refused to make its zero-proof an afterthought. Kiuchi has brewed in Ibaraki Prefecture with the same meticulous hand for generations — and when it turned to the non-ale, it kept everything that matters: a proper malt base, soft hops, the quiet umami that makes its beers worth crossing an ocean for. That refusal is why it entered the house.
Yuzu and ginger over a brewer's base — bright and alive. Citrus peel and toasted grain at the open, a gentle spice through the middle, and a crisp, zesty close carried on a fine effervescence. It drinks like the beginning of an evening.
