Neblina H2O Artesian Natural Mineral Water
The cloud forest, a century down.
Every other water on this wall was chosen for what has been kept out of it. Neblina is the first we chose for what it keeps alive.
It rises under artesian pressure inside the Mesenia-Paramillo Nature Reserve in southwest Antioquia, Colombia — a cloud forest where new species are still being found, fifteen years into the looking. The water arrives as mist — neblina — enters volcanic rock laid down nine million years ago, and takes roughly a century to travel down through it before emerging at 1,560 metres beneath the Combia Massif. Bottling it funds the reserve that protects it. That is a kind of provenance the category rarely offers, and it is why it entered the house.
One hundred and fifty-four milligrams per litre — low minerality, neutral at pH 7.0, moderately hard, still. Calcium and bicarbonate carry it; there is no salt to speak of. Rounder than Hallstein, quieter than anything sparkling: a water with just enough body to hold a plate, and none of the mineral bite that would interrupt one.
