Vellamo rises from Finland’s only natural mineral spring, ten thousand years beneath glacial rock, and it is the one water on this wall that occupies the middle. Five hundred and nineteen milligrams per litre — six times Hallstein, a fifth of Gerolsteiner. It has real structure and no power, which is a harder balance to strike than either extreme, and almost nothing else achieves it.
Carbonated, that structure sharpens. The bead sits on genuine mineral body rather than on air, which gives it a grip the delicate sparklers cannot manage — and makes it the sparkling water for a table that is actually eating.
