Volante Vodka
The East, remembered.
We chose Volante because we wanted one hand to hold the entire spirit shelf — and found it in a country that has distilled for centuries. Four classics, remembered without the alcohol, each built for the ritual it came from. The Eastern Clear Grain is the quiet one.
Clarity, here, is worked for. Filtered through eighteen plates until it pours crystal-clear, its character is built the hard way — a mineral spine, a gentle sharpness drawn not from ethanol but from real things: ginger's fresh heat, horseradish's piercing lift, a trace of habanero's warmth, gentian's dry backbone. What remains is what a vodka should be — clean, subtle, precisely balanced, present without announcing itself.
The bottle that holds the cocktail up without ever raising its voice.
We do not score. We read. The Reading is how the house locates this bottle — four axes, written on the four petals of the mark.

STAY quiet
One to four petals, quiet to pronounced. A Reading is a location, not a grade.
Poured in — the Savage Lowball, well chilled, or into whatever the bar composes.
Serve — cold, 39–41°F, where its mineral purity is most expressive. At the bar it is the clean foundation of the classics: the Mule, the Bloody Mary, the Espresso Martini, the Cosmopolitan. A note for the sensitive: it carries a trace of real pepper. Once open, it keeps four weeks — pour accordingly.
