Volante Whiskey
The Highlands, remembered.
We chose Volante because we wanted one hand to hold the entire spirit shelf — and found it in a country that has distilled for centuries. Four classics, remembered without the alcohol, each built for the ritual it came from. The Highland Legacy Malt is the serious one.
Its recipe is built on barley malt over oak — the structure, the pleasant dryness, the sense of maturity a single malt carries. Vanilla, caramel and toasted wood rise first; dried fruit and a subtle earthy depth follow, true to the Highland style; and the smoke is real — drawn from lapsang souchong tea and smoked apples, a gentle haze behind the grain. On the palate: toffee, orange peel, a touch of minerality, and a finish that closes smooth, gently warming, dry.
A tribute to Scotch — layered, authentic, unhurried in its character.
We do not score. We read. The Reading is how the house locates this bottle — four axes, written on the four petals of the mark.

One to four petals, quiet to pronounced. A Reading is a location, not a grade.
Poured in — the Savage Lowball, neat over one large rock. A finished pour that reads full.
Serve — slowly, the way a Highland pour has always asked. At the bar it anchors the composed Old Fashioned and the Highball, cut with Yamazaki Soda. Once open, it keeps four weeks — pour accordingly.
